Question: What is the difference between a Jam and a jelly?
Answer: A jam is made from the pulp of the fruit. A jelly is made from just the juice. A good jelly should have no fruit pulp in it and it should be clear.
Question: What is the difference between a jam, a preserve, and a marmalade?
Answer: Both jams and preserves are made from the pulp of the fruit. Preserves have large chucks of the base fruit in them while jams are processed finer. In general a jam is more difficult to make than a preserve because the fruit pulp has to be fully blended until a uniform smooth consistency is reached. Jams are typically superior to preserves because the finer texture of jams makes them easier to spread and gives them a smoother more consistent flavor. Marmalades are made from citrus fruits (oranges, lemons, etc.) and often incorporate slices of peel into the product.
Also, sometimes you will see what appears to be jam in the supermarket labeled and a 'preserve' or a 'spread' instead of being called a jam. This is because the FDA is defined what a 'jam' is and what a product must contain in order to be labeled a jam. Basically, a jam has a lot more fruit in it than a 'preserve'. In fact, if you buy a 'preserve' in the grocery store, it is not uncommon for it to contain more water (as a super-cheap filler) than actual fruit. And 'spreads' are basically lower on the quality rung than preserves are.
Question: Tell me a little about 'sugar free' jams.
Answer: Fruit has naturally occurring sugar in it. Hence, if a product contains absolutely no sugar it therefore must contain no fruit. Think about that the next time you buy a 'sugar free' preserve or spread (manufacturers are precluded by law from calling such products a 'jam' - see above).
The FDA has ruled that if a product contains less than one half of one percent sugar it can be labeled as 'sugar free'. That is less than .5% or .005 sugar. The average fruit is comprised of about 8% sugar (most are actually much higher, a few a little less). For you math buffs out there .4% is 1/20th of 8%. So, in order for a 'preserve' to legally be labeled 'sugar free' it cannot contain more than 1/20th actual fruit. In other words, if you see a purported fruit product labeled 'sugar free' less than 1/20th of that product is actual fruit. The rest of it is fillers (like water) artificial colors, flavors, and other chemicals.
Question: What about Pioneer Valley's low carb Sinless Raspberry Fancy Jam? How do you make it with less that one carb per tablespoon serving, meet the legal requirements, and still make a quality product?
Answer: If you turn the bottle around you will find that the number one ingredient is red raspberries. We start with a fruit that everyone enjoys and is naturally low in sugar. The rest...well....we don't want to give away ALL our secrets.
Because our low carb Sinless Raspberry has almost no sugar in it, it does not have the thickness or consistency of our regular jams. In keeping with our philosophy of making premium all natural products, we have chosen not to use any type of artificial thickeners in our low carb Sinless Raspberry.
Such thickeners are usually gums (xanthan gum, gum arabic, etc.), and occasionally more exotic chemical compounds. Xanthan gum is the most natural and the least offensive of the bunch. We may in the future, if requested enough, incorporate this into our Sinless Raspberry. But for now, we have left it out. Let us know what you think.
Question: What is the difference between a jelly and gelatin?
Answer: Jelly is made from basically four things: fruit juice, sugar, pectin and an acid (for homemade jellies that almost always means lemon juice or vinegar). Jelly is really an all natural fruit product and was originally used in the days before refrigeration to preserve fruit juice. (Fermentation was one of the other methods used.)
Gelatin (the most popular brand of which is Jello) is an animal by-product. You can make gelatin at home by boiling the bones, hooves, etc., of an animal. After several hours of boiling the oily stuff that rises to the top of the water and congeals when it cools is gelatin. Unless your religion is veganism and you are a rabid evangelical vegan, gelatin is a good and useful food. Many gravies, sauces, meat dishes, confections, and deserts make good use of gelatin.
Gelatin is typically much firmer than jelly. A good jelly will spread, gelatin will not. While gelatin can be fruit flavored, it is definitely NOT a jelly.
